Edamame salad with black quinoa

Ingredients

  • Avocado, ripe - ½ pcs (50 g)
  • Carrots - 1 pcs (55 g)
  • Cucumber - ½ pcs (230 g)
  • Edamame, Peeled, frozen -115 g
  • Green onion/scallion - 2 pcs (45 g)
  • Quinoa, uncooked - 60 g

Instructions

  1. Cook the quinoa according to the instructions on the packet in a pot of lightly salted water. Allow it to cool once cooked.
  2. Bring a pot of water to a boil. Add the edamame and cook for just 2 minutes then drain using a colander or sieve.
  3. Rinse the cucumber and dice it. Rinse and grate the carrots. Cut the avocado in half and remove the stone. Use a spoon to scoop out the flesh and dice it. Chop the green onion
  4. Mix all ingredients into a salad and serve in a bowl.
  5. Season with balsamic vinegar, salt and pepper to taste.
