Ingredients

  • 25g Hummus
  • 150g Chicken filet
  • 20g Quinoa
  • 70g Beetroot
  • 30g Spinach
  • 70g Sweet Potato
  • Salt
  • Pepper
  • Olive Oil

Instructions

  1. Set the oven at 180 degrees C.
  2. Peel the vegetables and make squares of 2x2cm. Spice with salt, pepper and olive oil.
  3. Roast them in the oven for 20 minutes.
  4. Boil the quinoa according to the instructions.
  5. Chop the chicken in similar sizes as the vegetables and fry in a pan with your favorite seasoning.
  6. Mix quinoa, vegetables and spinach, top with chicken and hummus.
