Ingredients

  • 200g Peeled shrimps
  • 200ml Coco milk(low fat)
  • 50g green onions
  • 50g red pepper
  • 15g curry paste
  • 125g uncooked basmati rice
  • 50ml water
  • 10g olive oil for frying

Instructions

  1. Cook the rice according to the instructions for your type of rice. Meanwhile when the rice boils, rinse and chop the green onion and bell pepper.
  2. Fry the curry paste in the oil in a saucepan for a couple of seconds and then add the green onion and bell pepper.
  3. Save some to top it off. Stir under high heat for 1 minute.
  4. Add the coconut milk and reduce the heat to medium heat while you wait for the rice to be ready.
  5. When the rice is done, add it to the coconut milk along with the shrimp. Add salt and pepper if you prefer.
  6. Cook for 1 minute on medium heat.
  7. Serve in a deep bowl and add the saved green onion and bell pepper.
