Ingredients

  • 70 g Feta Cheese 3%
  • 50 g Milk, low fat
  • 120 g Potatoes
  • 40 g Red onion
  • 5 g Butter
  • 100 g Zucchini
  • 60 g Egg, whole
  • 60 g Egg white
  • Salt
  • Pepper

Instructions

  1. You need a frying pan that can be used in an oven OR a baking tin.
  2. Set the oven a 150 celsius / 300 Fahrenheit.
  3. Peel the potatoes and boil in salted water about 10-15 min depending on the size!
  4. The potatoes should not be too “much cooked” or too soft! It should have a pretty solid structure.
  5. Grate zucchini the zucchini. Peel and chop the onion in to small pieces
  6. Whip eggs and egg whites, add the milk and a pinch of salt and pepper
  7. Heat up a pan with butter and add the onions and zucchini.
  8. Slice the potatoes and add it do the frying pan and fry until to onion got some color and add the eggs!
  9. Make crumbles of the feta cheese and sprinkle it over the pan.
  10. When the eggs have started to get stuck to the inside of the pan,
  11. put the pan in an oven for about 15 minutes.
