The mix of roasted almonds along with zucchini is fantastic, especially with some parmesan cheese! A perfect quick and easy lunch, perfect for LCHF! A lot of olive oil? Yes, tastes amazing and is packed with great fats.

Ingredients

  • 200g Zucchini
  • 25g Almonds, thin sliced
  • 30g Olive oil
  • 1 pinch of parmesan( not included in the macros)

Instructions

  1. Chop the onion in preferably sizes and fry it in olive oil in a saucepan.
  2. Add the rest ingredients and let it boil with a lid on low heat for 15 minutes.
  3. Chop fresh cilantro before served!
