Fresh Schrimp salad with lime

Quick and a fresh lime schrimp sallad. 1 big or 2 smaller portions.

Ingredients

  • 100g Shrimps, fresh and peeled
  • 50g Cashew nuts
  • 50g Rice Noodles
  • 50g Cucumber ~ 1/2
  • 50 g Gem salad
  • 40g Avocado ~ 1/2
  • 1 Lime
  • 1 pinch of fresh cilantro

Instructions

  1. Cook the noodles according to the instruction
  2. In the meantime, chop the salad, and cucumber and mix(together with dressing if you like)
  3. Chop the cilantro and cashew nuts roughly)
  4. Cool down the noodles when they are done with cold water.
  5. Mix the noodles with the sallad and shrimps, and squeeze some lime and
  6. sprinkle a pinch of fresh cut cilantro and cashew nuts over it. Add the avocado, since I doesn't like to mix avocado in this salad I prefer to have it on top as in the picture. But do what you prefer
